Smoked Mackerel pate



This is a super easy, prepare ahead starter which in this case was for a lazy Sunday roast with friends. Try to buy the best mackerel possible and do spend time de-boning the fillets, you don't want guests pulling bones out from their teeth!!

You will need:

400gms smoked mackerel
200gms cream cheese (I used low fat)
Zest of 1 lemon

150gms unsalted butter
3tsp of hot horseradish


Skin the fillets and break up the fish into smaller pieces - add to a food processor. (watch out for bones!!)

Add the cream cheese, lemon zest and season generously. 

'Whizz' (until you get the texture you desire)

'Plop' into individual ramekins and smooth out the top.

Melt butter in a pan, add the horseradish. Spoon over your pate and place a 1/4 of a lemon slice on top for decoration (or parsley leaves).  Season and place in the fridge to chill and set the butter. 






Serve with warm toast. EASY!
