Marmalade bread and cinnamon butter pudding

This is an adaptation of a Jamie Oliver one I found online over the weekend.  Wonderful Autumnal dish and super easy. It can be made ahead the day before as long as you re heat it back in the 'water bath' for 30-40mins. 

For the butter:

125g unsalted butter
Grated nutmeg (approx 1/2 tsp)
1/2 teaspoon ground cinnamon
Zest of 1.5 oranges

For the pudding:

12 slices of good quality bread
9 med eggs (1 egg white, 9 yolks)
140g caster sugar
500ml semi skimmed milk
580ml single cream
1/2 teaspoon Vanilla essence or 1 pod scored and de-seeded
Marmalade to glaze topping

Heat the oven to 180ÂșC.

Make your butter by combining all ingredients for the butter into a bowl and mix together for an even flavouring.

Butter your oven proof dish using some of this.

Take slices of bread and butter these both sides and cut diagonally. Arrange slices in the oven dish making sure you have some 'peaks' to get some crispy edges.

Now if you haven't done so already separate the eggs and whisk together the 9 yolks and 1 white with the sugar.

Gently heat the milk and cream in a pan with the vanilla. Pour this into your egg mixture and keep stirring! You don't want to scramble your eggs. 

Pour this over your bread and leave to soak for 10 minutes or so (20max). Put the dish into another roasting tray and fill the second up with water to halfway on your pudding dish. 

Oven bake for 45mins. Take out and brush your bread with warmed marmalade (see below). Put the dish back into the oven for another 10mins. 

Allow to firm and then serve with ice cream or custard!
