Cauliflower Cheese...

Sometimes all I want is home comforts, and food is one way to really make you feel snuggly and warm when it's this cold...One of Mr D and I's absolute favourites is Cauliflower cheese with a Sunday roast. So the other evening he jazzed this up as a main and served it simply with green beans - perfect.

Serves 2 as a main or 4 as a side.

You will need

1 x Cauliflower
500ml milk (not red top)
50g butter
50g flour
125g mixed Gruyere and cheddar cheese grated
Pancetta or parma ham 
pepper corns
1 x bay leaf

Pre heat oven to 180C.

Cut your cauliflower into small florets making sure to discard thick stalks otherwise these won't cook as well. Boil in a pan till tender.

Simmer the milk in a pan making sure it doesn't boil. Turn off heat and pop in some peppercorns and a bay leaf and let infuse for 10 minutes. Strain.

Make your roux by melting the butter and then adding the flour, stirring constantly until it thickens, then whisk in the milk. Bring to the boil then lower the heat adding the cheese bit by bit (not parmesan).

Put the cauliflower into an oven proof dish, adding the pancetta on top and pour over the cheese sauce, mix well to cover all the florets. Scatter the parmesan over the dish and bake in the oven for 25minutes until a nice crust has formed (the best bit).  

Serve - yummy!

this also works just as well with any strong cheese and cooked bacon.
