Easy peasy soda bread...

London is now covered in a fluffy blanket of snow, and so I have decided to make some soda bread for my breakfasts over the weekend. Super easy, and dead impressive served with a supper party starter...

Soda bread:

450gms plain flour - can do 50/50 with wholemeal
350ml buttermilk - see bottom for 'how to'
1/2 teaspoon salt
1 teaspoon caster sugar
4 x teaspoons baking powder (or 1 x teaspoon bicarbonate of soda)
olive oil
1 x large casserole dish with lid on.

Firstly pre heat your oven to 220C. take your large casserole dish in the oven to heat up (i am using 2 today for 2 smaller loaves).

Make your buttermilk.

Step 1: In a large mixing bowl mix together the salt, sugar, flour and baking powder. 


Step 2: the messy part....pour in the buttermilk and mix together to make a dough - it's very very sticky!!


Step 3: Create a rounded shape with the dough about 1.5inches thick....I like a rustic loaf so I don't roll it out however you can if you don't want your hands getting mucky... 

Step 4: take he dish out of the oven - be careful it's seriously hot!! throw some flour in the dish and place your loaf into the dish an brush with some olive oil.




Step 5: lid on, back into oven and bake for 35-40 minutes.

When out of the oven it should be golden and firm when tapping the underneath, let it stand for 5 minutes before cutting.

Enjoy with smoked salmon or (my favourite) when warm with soft butter - simple is best pour moi.












n.b.If you want cheesy bread grate 150gms Cheddar add 100g to the mix at step one. Then sprinkle the remainder on top on the loaf when in the dish before cooking.


Buttermilk: 1 x tablespoon of lemon juice mixed with 350ml of milk - leave it to sit for 5/6mins before using.
